Filling
- 3 cups of sliced peaches
- 2 cups of raspberries
- 1 cup of blackberries
- 3/4 cup of granulated sugar
- 3 tbsp. of cornstarch
- ½ a lemon’s worth of juice and zest
- 1 tsp. of pure vanilla extract
- One pinch of kosher salt
Topping
- 1 cup of all-purpose flour
- 2 tbsp. of granulated sugar
- 2 tsp. of baking powder
- 1/4 tsp. Of kosher salt
- 1 stick of cold butter cut into ½ inch pieces
- 1/2 cup of buttermilk
- 1 tsp. of pure vanilla extract
- Vanilla ice cream for serving
Instructions:
- Placed a grate over the campfire.
- In a large bowl, mix all of the filling ingredients.
- Transfer the mixture to a large cast iron skillet.
- Whisk together the flour, sugar, baking powder, and salt in a medium bowl.
- Add the butter and use your hands to incorporate until the pieces are pea-sized.
- Add the buttermilk and vanilla.
- Stir until everything is just combined.
- Spoon the mixture on the fruit and sprinkle everything with more sugar.
- Cover the skillet with a lid or with foil.
- Place on the grate over the campfire and cook for about 20 minutes.
