Ingredients

- 1 tbsp. olive oil
- 6 sweet Italian sausage links
- 2 Pink Lady apples, halved
- 1/2 red onion, sliced
- 1/2 head red cabbage, cut into 1/2-inch-thick slices
- Kosher salt
- freshly ground black pepper
- 1 cup of fresh apple cider
- 2 tbsp. fresh cider vinegar
Instructions:
- Wash and dry all your produce.
- Half the apples and slice the red onion thinly.
- Slice half of the red cabbage into ½” thick slices.
- Heat a large drizzle of oil in a cast iron skillet over your fire.
- Toss in the sausages and cook until golden brown, turning them to ensure an even cook. 6-8 minutes approximately.
- Transfer the sausages to a plate.
- Move the skillet to indirect heat and add the apples, being sure to place them with the sliced side down.
- Fill the skillet with onions and cabbage surrounding the apples, and season with salt and pepper.
- Cook until the apples are caramelized and beginning to turn golden brown. Approximately 3-4 minutes.
- Flip the apples over to allow the skin side to brown, and return the sausages to the skillet.
- Dump in cider and vinegar, and allow the whole thing to simmer for 18-20 minutes or until the sausages are cooked through, and the apples are tender.
- Serve hot over a bed of brown rice.
