Camping Recipe: Loaded Nachos

Ingredients

  • 1 bag tortilla chips
  • 1 1/2 c. shredded Mexican cheese blend
  • 1 can black beans
  • 1 can whole kernel sweet corn
  • 1 can diced green chiles
  • 1 can pickled jalapeño slices
  • 1/2 c. queso fresco
  • 1 avocado
  • 1 Roma tomato
  • 1 red onion
  • Sour cream
  • Green onions
  • Cilantro

Directions

  1. Build a strong fire and set the grill grate over the fire.
  2. Clean the grate with a paper towel dosed in olive oil held between tongs.
  3. Wash and dry all your produce and drain all the cans.
  4. Peel and dice the avocado, tomato, and red onion.
  5. Thinly chop the green onions and cilantro.
  6. Place a large cast-iron skillet on the grate and add a layer of tortilla chips to the skillet.
  7. Sprinkle 1/2 c. shredded cheese over the chips, 1/3 of the beans, corn, and diced green chiles.
  8. Add another layer of chips, cheese, etc. and repeat two more times. Top will cheese and jalapeño slices.
  9. Make a lid for the skillet with aluminum foil and cook until cheese melts, around 5 minutes.
  10. Remove from the heat and serve. Your family will love topping their nachos with the other ingredients to create a perfect plate for themselves.
